The Easiest & Best Lunch

Veggie Sandwich {My own creation!}

I wish I had a picture to post, but it was delicious, I think I scarfed it down in one bite. Not quite, obviously, but oh.my.gosh, it was amazing. I'll list the ingredients below..

2 Slices Tapioca Loaf {Gluten Free Bread}
1/2 Avacado, sliced
1 small Tomato, sliced salted and peppered
3 small Mushrooms, sliced
1 Tbsp. Vegan Mayonnaise
1 Tbsp. Hummus {store bought}

I toasted the bread, then smeared the Mayo and Hummus on either side, then layered the veggies. It was so sloppy from the Tomato Juices, but it just made it that much better!! I devoured it very quickly. I had whole, natural Walnuts on the side.

I'm kind of a food weirdy and like to enjoy different things that most people won't touch. But seriously, that was better than any Steak, Taco, or Pizza i've ever had! I may be eating it every day for lunch from now on. :)

  1. Sounds very yummy! I think the combination of the avocado and the hummus sounds great. Your baby had a yummy lunch!
